Hot Coconut Cider

Autumn is the ideal time to enjoy a hot glass of cider or Wassail, but this recipe with added coconut can be made on any day of the week.

This was so simple to prepare and the red tint from the cranberry juice makes it very pretty as well. For a luxurious feel add a smidgen of edible gold glitter, 1/4 tsp would be more than enough. For some glittery drinks, ideas have a look at this short youtube video. Apparently, you could buy Prosecco glitter in Poundland in the days when we were allowed to go out and shop. Search the online retailers for edible glitter but watch the prices, some of them seem to be overly expensive.

Ingredients:

  • 50ml Malibu
  • 50ml Cranberry Juice
  • 1tbsp Demerara sugar
  • Cider to fill

Method:

  1. Put the Malibu, cranberry juice and demerara sugar into a milk frother and then top the liquid level up to the max with cider.
  2. Replace the milk frother lid and press start.
  3. Wait until your milk frother has finished and pour straight into your glass.
  4. Enjoy your Hot Coconut Cider.

Try different ciders, dry, sweet or medium and vary the sugar quantities to suit.

Lucy’s Top Tip:– Try using one of the coconut liqueurs which are on special offer throughout most of the year. Not quite as punchy as the Malibu of course but still very drinkable.
